Savor

Agricultural production of fats and oils accounts for nearly 7% of global emissions. Savor is aiming to change that.

The San Francisco-based food tech company honed a process to molecularly mirror fats without the massive land, water, and fertilizer inputs of agriculture. By converting captured carbon dioxide and methane into fatty acids, Savor is able to rearrange them into form triglycerides that make up fats like butter, palm oil, and cocoa butter. This is a breakthrough that decouples food production from the need to take energy from other life forms for the first time. If Savor is able to scale this technology as it aims to, the implications for climate health, supply chain stability, and animal welfare would be profound.
